Nougat (Torrone) Ice Cream

Ingredients

• 1 L milk
• 250 g sugar
• 40 g candied red pumpkin
• 30 g candied citron
• 30 g almonds
• 20 g pistachios
• 4 count egg yolks
• vanilla

Instructions

1. Make a vanilla custard with milk, sugar, and egg yolks and freeze it.
2. Prepare the mix-ins: blanched split pistachios, chopped toasted almonds, sliced candied fruit, diced candied pumpkin.
3. Fold the mix-ins into the frozen custard.
