Fine Horseradish Sauce

Ingredients
- 2 heaped tablespoonsful horseradish root, young and tender, grated to pulp
- 1 moderate teaspoonful salt
- 4 tablespoonsful rich cream
- 3 dessertspoonsful good vinegar
- to taste garlic or shalot vinegar
Instructions
- Wash, wipe, and scrape the horseradish root free from its outer skin.
- Grate the root down on a very fine bright grater until quite reduced to a pulp.
- Mingle the grated horseradish, salt, and cream together smoothly.
- Stir the vinegar briskly into the mixture in very small portions.
- If desired, add a few drops of garlic or shalot vinegar.
