Orzata (Almond Orgeat)

Ingredients

Instructions

  1. Peel and pound the almonds to a fine paste, moistening with orange-flower water.
  2. Extract the almond milk in three stages, loosening the paste with a third of the water each time and pressing through a cloth.
  3. Heat all the milk, add the sugar, and boil about 20 minutes.
  4. Bottle when cold and keep cool. Dilute a little in water to serve.
