Ingredients
- bone marrow
Instructions
- Extract the marrow from the bones while as fresh as possible.
- Cut the marrow into small pieces.
- Put the marrow into a very clean jar.
- Melt it with gentle heat, using either a pan of water placed over the fire or at the mouth of a cool oven.
- Strain the melted marrow through muslin cloth.
- Let it settle for a minute or two.
- Pour the clear marrow into small jars, leaving the sediment behind.
- Once the marrow is cold, tie skins or double folds of thick paper over the jars.
- Store in a cool place.
