Bay-Laurel Kid in Milk

Ingredients

- spoonfuls honey

- defrutum (reduced grape must)
- wheat starch
- caul
Instructions
- Bone the kid, remove the innards, and wash it.
- Pound pepper, lovage, laser root, two bay berries, a little pyrethrum, and two or three brains; moisten with liquamen and season with salt. Strain two sextarii of milk and two spoonfuls of honey over the paste.
- Stuff the intestines with the mixture, coil them over the kid, cover with caul or paper, and skewer.
- Cook the kid in a pot with liquamen, oil, and wine. Half-way, grind pepper and lovage with the cooking juices and a little defrutum and stir it back in.
- When fully cooked, garnish, thicken with wheat starch, and serve.
