Green Beans and Baian Beans (Four Ways)

Ingredients
- green (fresh) beans (fabaciae virides)
- Baian beans (Baianae; beans from Baiae)
- liquamen (Roman fermented fish sauce)
- olive oil
- green coriander
- cumin
- leek
- mustard (sinapi), honey, pine nuts, rue, vinegar
- celery (apium), rue
- caroenum or passum (grape-must reductions)
Instructions
- Green beans: serve boiled with liquamen, oil, green coriander, cumin, and chopped leek.
- Another way: fry the beans and serve with liquamen.
- Another way: dress beans with ground mustard, honey, pine nuts, rue, cumin, and vinegar.
- Baian beans: boil and chop small; serve with rue, green celery, leek, vinegar, oil, liquamen, and a little caroenum or passum.
