- green rue
- liquamen (fermented fish sauce)
- wine
- passum (raisin wine)
- oil
- wheat starch
Instructions
- Dress the pig boar-style, salt, and roast in the oven.
- Grind pepper, lovage, caraway, celery seed, laser root, green rue; moisten with liquamen; temper with wine and passum; boil in a pan with a little oil and thicken with wheat starch.
- Baste the cooked pig with the sauce, dust with powdered celery seed, and serve.
