- coriander
- defrutum (reduced grape must)
- pepper
- lovage
- caraway
- oregano
- celery seed
- laser root
- passum (raisin wine)
- wheat starch
Instructions
- Brown and dress the pig; cook it in a pan with oil, liquamen, wine, water, and a bundle of leek and coriander; color with defrutum halfway through.
- Grind pepper, lovage, caraway, oregano, celery seed, laser root; moisten with liquamen and the pig's juices; temper with wine and passum; boil and thicken with wheat starch.
- Pour over the pig in a dish, sprinkle with pepper, and serve.
