Instructions

  1. Brown and dress the pig; cook it in a pan with oil, liquamen, wine, water, and a bundle of leek and coriander; color with defrutum halfway through.
  2. Grind pepper, lovage, caraway, oregano, celery seed, laser root; moisten with liquamen and the pig's juices; temper with wine and passum; boil and thicken with wheat starch.
  3. Pour over the pig in a dish, sprinkle with pepper, and serve.
