Crane or Duck with Turnips

Ingredients
- crane or duck
- turnips
- salt
- dill
- olive oil
- liquamen (Roman fermented fish sauce)
- leek
- coriander
- defrutum (reduced grape must)
- pepper
- cumin
- laser root
- vinegar
- wheat starch (amulum)
Instructions
- Parboil the dressed bird in water, salt and dill; blanch turnips to remove bitterness.
- Return the bird to a pot with oil, liquamen and a leek-and-coriander bundle; add the chopped turnip and cook, adding defrutum near the end for color.
- Make a sauce of pepper, cumin, coriander and laser root with vinegar and the cooking juices; boil over the duck, thicken with wheat starch, and pour over the turnips. Finish with pepper.
