Crane or Duck with Turnips

Ingredients

Instructions

  1. Parboil the dressed bird in water, salt and dill; blanch turnips to remove bitterness.
  2. Return the bird to a pot with oil, liquamen and a leek-and-coriander bundle; add the chopped turnip and cook, adding defrutum near the end for color.
  3. Make a sauce of pepper, cumin, coriander and laser root with vinegar and the cooking juices; boil over the duck, thicken with wheat starch, and pour over the turnips. Finish with pepper.
