Boned and Stuffed Kid or Lamb (Piped Style)

Ingredients
- kid or lamb
- liquamen (fermented fish sauce)
- milk
- ground pepper
- caroenum (reduced sweet grape must)
- defrutum (reduced grape must)
- olive oil
- amulum (wheat starch)
- seawater
- salt
Instructions
- Bone the kid from the throat so the carcass forms a bag; draw out the intestines whole, clean them, and wash everything well.
- Stuff the carcass with a little liquamen added, sew it up at the shoulders, and bake it in the oven.
- Once cooked, pour over a boiling sauce of milk, ground pepper, liquamen, caroenum, a little defrutum, and oil; thicken with wheat starch as it boils.
- Alternatively, tie it in a net or basket and boil in salted stock through three surges, then reboil in the sauce and pour the boiling sauce over.
