Batter Pudding

Instructions

  1. Beat the egg yolks separately until very light.
  2. Beat the egg whites separately until very light.
  3. Sift the flour three times.
  4. Pour half of the milk to the flour and beat it light.
  5. Add the beaten yolks of eggs to the flour and milk mixture and beat.
  6. Add the beaten whites and beat again.
  7. Add the remaining half pint of milk and beat the whole pudding until very light.
  8. Wet a good, tight, strong white bag and put flour thickly on the inside.
  9. Put the pudding batter into the prepared bag and tie it tight.
  10. Place the tied bag in a pot of boiling water and let it boil for three quarters of an hour.
  11. Rub sugar and butter together until light to make the sauce.
  12. Flavor the sauce with nutmeg.
  13. Stir a wine glass of sherry wine or brandy into the sauce well.
