Batter Pudding

Ingredients
- 5 eggs
- 6 tablespoons flour
- 1 pint milk
- 1 teaspoon salt
- sugar
- butter
- nutmeg
- 1 wine glass sherry wine or brandy
Instructions
- Beat the egg yolks separately until very light.
- Beat the egg whites separately until very light.
- Sift the flour three times.
- Pour half of the milk to the flour and beat it light.
- Add the beaten yolks of eggs to the flour and milk mixture and beat.
- Add the beaten whites and beat again.
- Add the remaining half pint of milk and beat the whole pudding until very light.
- Wet a good, tight, strong white bag and put flour thickly on the inside.
- Put the pudding batter into the prepared bag and tie it tight.
- Place the tied bag in a pot of boiling water and let it boil for three quarters of an hour.
- Rub sugar and butter together until light to make the sauce.
- Flavor the sauce with nutmeg.
- Stir a wine glass of sherry wine or brandy into the sauce well.
