Blackberry Brandy

Ingredients
- 5 gallons blackberries
- 1 gallon brandy
- 10 pounds granulated sugar
- 1 quart water
Instructions
- Combine five gallons of berries with one gallon of the best brandy in a porcelain kettle.
- Place on fire and let it just come to a boil, then remove from heat.
- Make a syrup by combining ten pounds of granulated sugar with one quart of water.
- Cook the syrup until thick as honey, skimming off the foam while it boils.
- Pour the hot syrup upon the brandy and berries.
- Let the mixture stand in a stone jar or brandy keg for eight weeks.
- After eight weeks, pour into bottles or demijohns for storage.
