Boiled Turkey

  1. See that the turkey is well cleaned.
  2. Season the turkey according to preference: for high seasoning, apply one teaspoonful of cayenne pepper on the inside and one tablespoonful of salt on the outside, then season with two teaspoonfuls of black pepper; for milder seasoning, use half these quantities.
  3. Let the seasoned turkey lay for one hour before boiling.
  4. Chop raw ham and veal fine together.
  5. Season the ham and veal mixture with one-half teaspoonful of salt and one-half teaspoonful of cayenne pepper.
  6. Add one dozen oysters to the stuffing.
  7. Sprinkle in one teaspoonful of dry mustard and half a teacupful of browned crackers, powdered.
  8. Work the stuffing well with a spoon until combined.
  9. Stuff the turkey full and tight in both the craw and body.
  10. Put the turkey in a bag and tie it very tight.
  11. Place the tied turkey in boiling water with one tablespoonful of salt added, with enough water to cover it.
  12. Boil a young turkey for one hour and five minutes, or an old turkey for two hours.
  13. Rub two tablespoonfuls of butter and one and one-half tablespoonfuls of flour together until well mixed.
  14. Sprinkle half a teaspoonful of mustard into the butter and flour mixture.
  15. Add one pint of boiling milk and stir until it is as thick as honey.
  16. Add half a teaspoonful of salt to the gravy.
  17. Send the gravy to table with the turkey.
