Apple Roll

Ingredients
- 1 quart flour
- 1 tablespoon butter
- 1 tablespoon lard
- 1 teaspoon fine salt
- 1 teacupful water
- 1.5 pounds apples
- dry sugar
- water for boiling
Instructions
- Work the lard or butter into the flour dry until thoroughly mixed.
- Add salt and water a little at a time, mixing until the dough is thick enough to roll on the pastry block.
- Sprinkle dry flour on the work surface to prevent the dough from sticking.
- Peel and cut the apples very thin.
- Roll out the dough as thin as pie crust to dimensions of approximately eighteen by ten inches and prepare three sheets of this size.
- Lay one sheet of dough down and cover it with apples.
- Sprinkle dry sugar over the layer of apples.
- Lay the second sheet of dough down and cover it with apples.
- Sprinkle dry sugar over this second layer of apples.
- Lay the third sheet of dough down and cover it with apples.
- Sprinkle dry sugar over the third layer of apples.
- Roll the whole assembly up together as you would roll a towel.
- Wet a white cloth in cold water and wrap it tightly around the roll, sewing it securely closed.
- Place the wrapped roll into a pot of boiling water with enough water to cover it completely.
- Cook for no more than twenty minutes.
