Another Pourable Patina (Alexanders and Brains)

Ingredients
- alexanders (horse parsley, holisatrum)
- brains
- scruples pepper
- cyathus liquamen (Roman fermented fish sauce)
- cyathus wine
- cyathus passum (raisin wine)
- eggs
- oil
Instructions
- Clean, wash, boil, cool and drain alexanders.
- Skin and cook 4 sets of brains.
- Grind 6 scruples pepper with liquamen, add the brains and grind, then the alexanders.
- Beat in 8 eggs with a cyathus each of liquamen, wine and passum.
- Pour into a greased pan, set in hot ashes, cook, sprinkle pepper and serve.
