- liquamen (Roman fermented fish sauce)
- olive oil
- vinegar
- defrutum (reduced grape must)
- raisins
- pine nuts
- onion
Instructions
- Roast the suckling pig carefully.
- Make a mortar-sauce: pound pepper, dill, oregano and fresh coriander; mix in honey, wine, liquamen, oil, vinegar and defrutum.
- Warm the sauce and pour over the pig; scatter raisins, pine nuts and chopped onion, and serve.
