Instructions

  1. Before cooking, truss and sew the kid; season it with pepper, rue, savory, onion, and a little thyme.
  2. Wash it with liquamen and let it soften in the oven or in an oiled pan.
  3. Once cooked, pour over a pounded paste of savory, onion, rue, dates, liquamen, wine, caroenum, and oil.
  4. When it has absorbed the paste, plate it, sprinkle with pepper, and serve.
