Truffles, Another Way (with Optional Caul Wrap)

Ingredients
- truffles (tubera)
- salt
- liquamen (fermented fish sauce)
- green oil
- caroenum (reduced grape must)
- wine
- pepper
- honey
- starch (amulum)
- pig's caul (omentum porcinum)
Instructions
- Boil the truffles, salt them, fix on skewers, and half-roast.
- Boil together liquamen, green oil, caroenum, a little wine, crushed pepper and a little honey; bind with starch.
- Prick the truffles so they absorb the sauce and dress them.
- Once well absorbed, serve. Alternatively wrap the truffles in pig's caul, roast, and serve.
