Suckling Pig Sprinkled with Thyme

Ingredients

Instructions

  1. Boil a milk-fed pig (killed the day before) with salt and dill, dipping it repeatedly in cold water to keep it pale.
  2. Scatter over it green herbs, thyme, a little pennyroyal, hard-boiled eggs and finely chopped onion.
  3. Season with 1 hemina liquamen, 1 lb oil and 1 lb passum, and serve.
