Suckling Pig Sprinkled with Thyme

Ingredients
- milk-fed suckling pig
- salt
- dill
- cold water
- green herbs
- thyme
- pennyroyal
- hard-boiled eggs
- onion
- hemina liquamen (Roman fermented fish sauce)
- pondo (lb) olive oil
- pondo (lb) passum (raisin wine)
Instructions
- Boil a milk-fed pig (killed the day before) with salt and dill, dipping it repeatedly in cold water to keep it pale.
- Scatter over it green herbs, thyme, a little pennyroyal, hard-boiled eggs and finely chopped onion.
- Season with 1 hemina liquamen, 1 lb oil and 1 lb passum, and serve.
