Matian Minutal (with Matian Apples)

Instructions

  1. Put oil, liquamen and stock in a pot; chop in leek, coriander and small forcemeat-balls.
  2. Cut cooked pork shoulder into cubes with its rind and cook all together.
  3. Halfway through, add cored, diced Matian apples.
  4. Grind pepper, cumin, coriander, mint and laser root; moisten with vinegar, honey, liquamen and a little defrutum plus the dish's own juices, tempering with a little vinegar.
  5. Bring to the boil; crumble in tracta to bind. Sprinkle with pepper and serve.
