Suckling Pig in Fish-Sauce

Ingredients

Instructions

  1. Remove the pig's belly, leaving some flesh inside; brown the pig.
  2. Grind pepper, lovage, oregano; moisten with liquamen; mix in one brain and two eggs.
  3. Stuff the pig, pin it, and lower it in a basket into a boiling pot. When cooked, remove the pins to let the juices drain, and serve sprinkled with pepper.
