Ingredients
- intestine
- forcemeat filling
- pheasant oenogarum (wine-and-liquamen sauce)
- cumin
Instructions
- Fill the intestine with forcemeat filling and shape into a round ring.
- Smoke it until it has reddened.
- Lightly roast and garnish it.
- Pour pheasant oenogarum over it, adding cumin.
