Instructions

  1. Clean, bone, and dress the hare; cook it in a pan with oil, liquamen, stock, and a bundle of leek, coriander, and dill.
  2. Grind pepper, lovage, cumin, coriander seed, laser root, dry onion, mint, rue, celery seed; moisten with liquamen; add honey and the hare's juices; temper with defrutum and vinegar.
  3. Boil, thicken with wheat starch, garnish, pour over, sprinkle with pepper, and serve.
