Instructions

  1. Chop cooked sow's udder, fish and chicken finely; beat eggs separately.
  2. Make a sauce of pepper, lovage, liquamen, wine, passum and oil; boil, then bind with eggs and add the meats.
  3. Layer in a bronze pan alternating pasta sheets and ladlefuls of the meat, sprinkling oil.
  4. Pierce the top sheet, turn out onto a plate and replace the sheet; sprinkle pepper and serve.
