Ingredients
- sow's udder (sumen)
- fish flesh
- chicken flesh
- eggs
- pepper
- lovage
- liquamen (Roman fermented fish sauce)
- wine
- passum (raisin wine)
- oil
- pasta sheets (lagana)
Instructions
- Chop cooked sow's udder, fish and chicken finely; beat eggs separately.
- Make a sauce of pepper, lovage, liquamen, wine, passum and oil; boil, then bind with eggs and add the meats.
- Layer in a bronze pan alternating pasta sheets and ladlefuls of the meat, sprinkling oil.
- Pierce the top sheet, turn out onto a plate and replace the sheet; sprinkle pepper and serve.
