Scorpion-Fish with Turnips

Instructions

  1. Cook the scorpion-fish in liquamen and oil; when half-cooked, remove it.
  2. Finely chop boiled turnips and squeeze out all their water by hand; bind them with the fish and boil well with plenty of oil.
  3. Once boiling, pound cumin and half a bay berry; add saffron for color.
  4. Thicken with rice starch, pour over, add a little vinegar, and serve.
