Ingredients
- suckling pig
- olive oil
- liquamen (Roman fermented fish sauce)
- pepper
- rue
- bay berry
- passum or caroenum (sweet reduced wine/must)
- old wine
Instructions
- Dress the suckling pig and cook it in oil and liquamen.
- As it cooks, pound pepper, rue, bay berry, liquamen, passum or caroenum and old wine in a mortar.
- Temper and transfer to a bronze pan; put the pig into it.
