Corbina Stew

Ingredients
- corbina (a white-fleshed South American croaker/sea bass)
- salt
- butter
- onion
- pepper
- tomatoes
- 1 clove garlic
- oregano
- 1/2 bottle good vinegar
- 1/2 bottle water
- pickled gherkins (pepinillos escabechados)
- black olives
Instructions
- Cut the corbina into regular pieces and wash them several times in salted water.
- In an enameled pan, over a layer of butter, lay onion slices with a light dusting of pepper, then a layer of corbina with another light dusting, and repeat until finished.
- Cover with a sauce of roasted, deseeded, peeled and ground tomatoes, onions in rounds, pepper, a ground garlic clove, ground oregano, half a bottle of good vinegar and half a bottle of water.
- Cook over a low fire until the onion is well cooked — then the stew is done.
- Serve garnished with pickled gherkins and black olives.
