Asparagus in Cream

Ingredients

Instructions

  1. Plunge the asparagus into boiling water.
  2. Sweat them in a pan over low heat with very fresh butter, without letting them color.
  3. Add a cup of cream or milk, a spoonful of flour dissolved in milk, salt and pepper; cook until the sauce reduces.
  4. Off the heat, stir in three beaten egg yolks to finish the sauce.
  5. Serve alongside a dressing of oil, vinegar, salt and pepper.
