Argentine Layer Cake

Ingredients
- 1 lb sugar, well ground
- 1 lb wheat flour
- 1 lb fresh butter
- 12 eggs (3 whites reserved)
- lemon essence
- dulce de leche (caramelized-milk confection)
- 1/2 lb powdered sugar (for the meringue glaze)
Instructions
- Beat 12 yolks and 9 whites with butter, reserving 3 whites; add sifted flour then sugar, plus lemon essence, to a soft batter.
- Spread wafer-thin layers of batter in twelve lightly buttered molds and bake briefly in a strong oven.
- Turn out the wafers and stack them, spreading dulce de leche between each layer.
- Beat the reserved whites with powdered sugar to a meringue, glaze the cake, and dry in a warm oven.
