Argentine Layer Cake

Ingredients

Instructions

  1. Beat 12 yolks and 9 whites with butter, reserving 3 whites; add sifted flour then sugar, plus lemon essence, to a soft batter.
  2. Spread wafer-thin layers of batter in twelve lightly buttered molds and bake briefly in a strong oven.
  3. Turn out the wafers and stack them, spreading dulce de leche between each layer.
  4. Beat the reserved whites with powdered sugar to a meringue, glaze the cake, and dry in a warm oven.
