Ambrosia

Ingredients
- 1 L good milk
- 1 lb sugar
- 12 egg yolks
- 6 egg whites, well beaten separately
- 2 lemons, zested (outer skin)
- 1 small glass the best wine (Port measure)
- curaçao (more recommended than wine)
- butter (for the mold)
Instructions
- Heat the milk with sugar until it begins to boil.
- Add twelve yolks, six beaten whites and the zest of two lemons.
- Stir over lively heat until a green syrup appears on the surface.
- Bake in a buttered mold at moderate heat, quickly.
- As it pulls from the mold, sprinkle with the best wine or, preferably, curaçao.
