Instructions

  1. Pour the water into a saucepan and place over medium heat. Add a pinch of salt and the butter. When the mixture begins to boil, remove from heat and stir in the flour all at once. Continue stirring without pause, cooking the dough for a while until it becomes thick and pulls away cleanly from the sides of the pan.
  2. Transfer the dough to a churrera (churro piping device). Fry the churros in very hot, abundant oil until golden and crisp.
