Instructions

  1. Pour 500 ml of water into a saucepan and place over medium heat.
  2. Add a pinch of salt and about 40 grams of butter.
  3. When the mixture begins to boil, remove from heat and stir in 500 grams of flour all at once.
  4. Continue stirring without pause, cooking the dough for a while until it becomes thick and pulls away cleanly from the sides of the pan.
  5. Transfer the dough to a churrera (churro piping device).
  6. Fry the churros in very hot, abundant oil.
