Almond Sweetmeat

Ingredients

Instructions

  1. Bring 250 ml of water to a boil with one pound of sugar to make a syrup (almíbar) — not too thick.
  2. Remove from heat and let cool until lukewarm.
  3. Once cooled, stir in half a pound of ground almonds using a spoon, mixing well.
  4. Add the five beaten egg yolks.
  5. Return to low heat, stirring constantly in one direction, until the mixture thickens to the desired consistency. Do not stop stirring.
