  1. Bring the water to a boil. When it begins to boil, add the sugar and egg white. Stir constantly and skim thoroughly, allowing it to boil until it reaches the desired consistency. For fruit preserves, cook until it is not too thick; for candied sweets (tocinillos), cook until it is strong and thick; and if you want it at the point of caramel, you will know it is ready when a drop placed in cold water becomes hard and caramelized.
