Clarified Sugar Syrup

Ingredients
- 1 liter water
- 1 kilogram sugar
- 1 whole egg white
Instructions
- Bring the water to a boil.
- When it begins to boil, add the sugar and egg white.
- Stir constantly and skim thoroughly, allowing it to boil until it reaches the desired consistency.
- For fruit preserves, cook until it is not too thick; for candied sweets (tocinillos), cook until it is strong and thick; and if you want it at the point of caramel, you will know it is ready when a drop placed in cold water becomes hard and caramelized.
