Fried Chicken

Ingredients
- 1 chicken
- salt
- garlic
- to taste olive oil
- lemon juice
- parsley
- onion
- carrot
- allspice (pimienta inglesa)
- 1 ladle caldo (broth)
- breadcrumbs
- 1 egg
Instructions
- Clean and cut the chicken into pieces. Season with salt and garlic, then rub with a cloth.
- Fry in olive oil. Add lemon juice, parsley, onion, carrot, allspice, and a ladle of caldo (broth).
- Simmer over low heat until the sauce reduces completely.
- Roll the chicken pieces in breadcrumbs, then coat with beaten egg and breadcrumbs again. Fry until golden.
