Lobster

Ingredients
- 1 whole or as desired Lobster
- Water
- Oil or beef lard (manteca de vaca)
- 1 medium Carrot
- 1 medium Onion
- 1 small glass Sherry wine (jerez)
- Stock (caldo)
- Mayonnaise
- Green sauce (salsa verde)
Instructions
- Bring water to a boil. Add the lobster, whole or cut into pieces or rounds, and cook for a few minutes, taking care to remove the vein thoroughly and ensuring the juices are retained.
- In a separate pan, heat oil or beef lard (manteca de vaca) and sauté diced carrot and onion until soft. Add the parboiled lobster to this pan, then transfer everything to a heavy pot or casserole. Pour in a small glass of sherry wine, cover tightly, and bring to a simmer.
- Halfway through cooking, add stock (caldo) as needed to complete the cooking process.
- When the lobster is fully cooked, transfer it to a serving dish. Serve accompanied by mayonnaise, green sauce (salsa verde), or according to preference.
