Spinach Dish

Ingredients
- fresh spinach
- lard (manteca de cerdo)
- several small pieces jamón (cured ham)
- 1 hard-boiled egg
Instructions
- Cook the spinach and squeeze it thoroughly dry. Chop it very finely.
- Heat the lard in a pan and fry small cubes of jamón (cured ham) until they render slightly; remove them with a slotted spoon, leaving the fat in the pan.
- Reheat the chopped spinach gently in the same lard until well combined.
- Arrange the spinach on a serving dish, shaping it into small nests or little cups (pocillos). Into the hollow of each nest, place a cube of the fried jamón and half a hard-boiled egg, arranged so the yolk is visible.
