Spinach Dish

Instructions

  1. Cook the spinach and squeeze it thoroughly dry. Chop it very finely.
  2. Heat the lard in a pan and fry small cubes of jamón (cured ham) until they render slightly; remove them with a slotted spoon, leaving the fat in the pan.
  3. Reheat the chopped spinach gently in the same lard until well combined.
  4. Arrange the spinach on a serving dish, shaping it into small nests or little cups (pocillos). Into the hollow of each nest, place a cube of the fried jamón and half a hard-boiled egg, arranged so the yolk is visible.
