Stuffed Tomatoes á la Abadesa

Ingredients

Instructions

  1. Halve the tomatoes across their width, remove seeds, and scoop out the pulp.
  2. Sieve the pulp and mix it into a filling of truffles, minced cooked meat and chopped hard-boiled eggs; fill the tomatoes.
  3. Put melted butter in a flameproof dish and set the tomatoes in it under a thick layer of fine breadcrumbs.
  4. Finish cooking over low fire with embers on the lid and coals below.
