Cuajada (Spanish Curd Dessert)

Ingredients
- 1 liter cow's or sheep's milk
- lamb rennet (cuajo de cordero)
- to taste fine sugar
Instructions
- Heat the milk gently over the fire until it is warm. Dissolve a small amount of lamb rennet (mixed with milk) and stir it into the warm milk. Remove from heat and pour into a suitable mold or dish designed for setting curds. Allow it to set undisturbed in a quiet place without any movement. Serve with fine sugar sprinkled on top.
