Cheese-and-Egg Fritters 'à la Helenita' (Rebozados)

Ingredients

Instructions

  1. On a plate, mix butter with grated bread and cheese, one to three spoonfuls of cream (or good milk), the beaten yolks of two eggs, pepper, and very little salt.
  2. Beat well and cook in an enameled saucepan over a layer of butter in the bottom.
  3. When cooking shows on the surface, break whole eggs over it, one beside another, keeping their shape and covering the paste.
  4. Sprinkle with pepper, a little salt, and grated cheese; cover with the lid and spread embers and coals on top.
  5. When the cheese and eggs are light golden and the whites set, serve in the same pan on a tray, edges hidden with parsley and mint sprigs.
