Cocido Pudding

Instructions

  1. Drain the broth from the cocido.
  2. Remove the skins from the garbanzos and mash them thoroughly.
  3. Finely chop all the solid ingredients from the cocido: the meat, chicken, chorizo, jamón, tocino, and potato.
  4. Heat a skillet over the fire with lard, finely chopped onion, and finely chopped tomatoes.
  5. Add all the chopped ingredients and reheat everything together, stirring well.
  6. Grease a smooth mold with lard and transfer the mixture into it.
  7. Bake in the oven until the top is golden brown.
  8. Let it rest, then turn it out onto a round serving platter. Serve with mayonnaise.
