Cocido Pudding

  1. Drain the broth from the cocido. Remove the skins from the garbanzos and mash them thoroughly. Finely chop all the solid ingredients from the cocido: the meat, chicken, chorizo, jamón, tocino, and potato.
  2. Heat a skillet over the fire with lard, finely chopped onion, and finely chopped tomatoes. Add all the chopped ingredients and reheat everything together, stirring well.
  3. Grease a smooth mold with lard and transfer the mixture into it. Bake in the oven until the top is golden brown.
  4. Let it rest, then turn it out onto a round serving platter. Serve with mayonnaise.
