Cocido Pudding

Ingredients
- garbanzos (chickpeas)
- meat from cocido
- chicken from cocido
- chorizo (Spanish sausage)
- jamón (cured ham)
- tocino (cured pork belly)
- potato from cocido
- manteca de cerdo (lard)
- onion
- tomato
- mayonnaise
Instructions
- Drain the broth from the cocido. Remove the skins from the garbanzos and mash them thoroughly. Finely chop all the solid ingredients from the cocido: the meat, chicken, chorizo, jamón, tocino, and potato.
- Heat a skillet over the fire with lard, finely chopped onion, and finely chopped tomatoes. Add all the chopped ingredients and reheat everything together, stirring well.
- Grease a smooth mold with lard and transfer the mixture into it. Bake in the oven until the top is golden brown.
- Let it rest, then turn it out onto a round serving platter. Serve with mayonnaise.
