French Omelette

Ingredients
- eggs
- 1 teaspoon milk
- salt
- parsley
- small amount manteca (lard)
Instructions
- Beat the eggs very lightly. Season with salt and finely chopped parsley, adding one teaspoon of milk per egg. Heat a small amount of manteca in a skillet until hot. Pour in the egg mixture, stirring constantly. When one side is set, flip to cook the other side. Fold the omelette and serve.
