Watermelon Preserve

Ingredients
- 1 whole watermelon
- 1 kg sugar
- water
Instructions
- Remove the outer rind and the red flesh from the watermelon. Cut the white rind (the pale portion just inside the outer skin) into small dice-shaped pieces.
- Bring a pot of water to a rolling boil and drop in the watermelon pieces. Simmer for fifteen minutes, then transfer them to a bowl of cold water and let them cool completely.
- In a separate pot, prepare a syrup (almíbar) at the strong point (point de sucre or hard-ball stage). Add the cooled watermelon pieces to the syrup and return to a boil, allowing it to cook until the mixture reaches the proper setting point. Use one kilogram of sugar for each kilogram of prepared fruit.
