Balmoral-Style Junket

Ingredients
- good milk, freshly milked and still warm
- 2 flowers thistle flower (cardo), the purple part, well ground
- sugar
- cinnamon
Instructions
- Use good milk, ideally freshly milked and still warm (the rich apoyo).
- Grind the purple part of two thistle flowers and tie it in gauze.
- Stir the warm milk two minutes with the thistle bundle, squeezing it, then let it rest.
- When set, dust generously with sugar and cinnamon and serve.
