Roast Beef

Instructions

  1. Season the roast with salt and pepper before putting it to cook.
  2. Baste it with lard or butter before putting it in the oven.
  3. Place the roast in an oven that bakes evenly on both bottom and top.
  4. If the oven gets too hot on either the top or bottom, shut the damper slightly off to moderate the heat.
  5. While cooking, baste the roast with the juice that comes out of the meat every two or three minutes.
  6. Cook until done — a five-pound roast should take half an hour, and a ten-pound roast one hour, with the meat well cooked outside and rare on the inside.
