Roast Beef

Ingredients
- 5–10 pounds beef roast
- salt
- pepper
- lard or butter
Instructions
- Season the roast with salt and pepper before putting it to cook.
- Baste it with lard or butter before putting it in the oven.
- Place the roast in an oven that bakes evenly on both bottom and top.
- If the oven gets too hot on either the top or bottom, shut the damper slightly off to moderate the heat.
- While cooking, baste the roast with the juice that comes out of the meat every two or three minutes.
- Cook until done — a five-pound roast should take half an hour, and a ten-pound roast one hour, with the meat well cooked outside and rare on the inside.
