Ingredients

Instructions

  1. Break the five eggs into the two cups of sugar and beat the whole till perfectly light.
  2. Sift one quart of flour.
  3. Take one-half teacup of sweet milk and put a level teaspoonful of soda in it, without lumps.
  4. Add one teaspoonful of salt to the milk mixture.
  5. Flavor the mixture with the juice of one orange, the grated peel of half an orange, and one teaspoonful of butter.
  6. Make the dough in the same way as for light bread.
  7. Roll out the dough as for biscuit.
  8. Cut the dough into pieces five inches by two inches.
  9. Slice each piece two inches in the middle and stretch open a little.
  10. Have your fat boiling hot, but do not let it burn.
  11. Put the carolas in the hot fat and shake the skillet gradually till brown.
  12. As you take them out of the fat, lay them in a pan on clean paper to drain the grease from them.
