Freezing Ices (Method)

Ingredients

• prepared ice mixture
• ice
• salt

Instructions

1. See that the freezing pot — the *garrafa* or mould you mean to use — is thoroughly clean and closes tightly. Pour in the prepared mixture, close it, and stand it in a bucket packed round with ice and salt, filling the bucket up with more ice and salt as you go. Once it is all packed in, turn the pot steadily, in full turns or quick half-turns, until the mixture freezes.
