Royal Delight

Ingredients

• 4 lb sugar
• 1.5 lb ground almonds
• 3 oz wheat starch (almidón de trigo)
• 1/2 bottle milk

Instructions

1. Make a high-point syrup with the sugar and cool to lukewarm.
2. Add the ground almonds.
3. Cook the wheat starch in milk until thick, then mix into the almond syrup.
4. Return to the fire and bring to point.
