Elenita's Find

Ingredients
- 1/2 lb fine flour (flor de harina)
- 1 glass good red wine (Burgundy or Priorato), for the dough
- 3 egg yolks
- sugar (to sweeten the dough moderately)
- 1 cup fresh melted butter
- high-point syrup (almíbar), for the filling
- Burgundy red wine (for the filling)
- ground cinnamon and cloves
- almonds, raisins, walnuts, pine nuts and toasted sesame (ajonjolí)
- acitrón (candied citron), in slivers
- sugar (for final dusting)
Instructions
- Make a well in the flour and add red wine, yolks, sugar and melted butter; knead a smooth dough.
- Roll thin and cut rounds; line a buttered plate with three buttered rounds.
- Make a filling off the heat of syrup, Burgundy wine, cinnamon, cloves, almonds, raisins, walnuts, pine nuts and toasted sesame.
- Add the filling, stud with raisins, almonds and candied citron, and cover with three more dough sheets.
- Seal and crimp the edges, decorate with a dough rope, brush with butter, and bake; dust with sugar while hot.
