Potato Balls

Instructions

  1. Boil the potatoes in salted water until tender. Peel them and pass through a potato ricer to form a purée.
  2. Beat the egg yolks and egg white together until well combined. Add the butter and work everything together vigorously until the mixture forms a thick paste.
  3. Stir in the flour (about a jícara / 1 cup measure). Form the mixture into balls about the size of meatballs (albóndigas).
  4. Heat the lard (manteca) until very hot. Fry the potato balls until golden. Serve immediately.
