Potato Balls

Ingredients
- 500 g potatoes
- 2 large egg yolks
- 1 large egg white
- 40 g butter
- 1 jícara flour
- lard (manteca)
Instructions
- Boil the potatoes in salted water until tender. Peel them and pass through a potato ricer to form a purée.
- Beat the egg yolks and egg white together until well combined. Add the butter and work everything together vigorously until the mixture forms a thick paste.
- Stir in the flour (about a jícara / 1 cup measure). Form the mixture into balls about the size of meatballs (albóndigas).
- Heat the lard (manteca) until very hot. Fry the potato balls until golden. Serve immediately.
