Natillas (Spanish Custard)

Ingredients

Instructions

  1. Heat 250 ml of milk with a piece of lemon zest and a stick of cinnamon or vanilla. Allow to cool completely.
  2. In a separate bowl, beat together the ten egg yolks and 200 grams of sugar until well combined.
  3. Mix the cooled milk with the egg and sugar mixture. Place this custard in a bain-marie (water bath), stirring constantly in one direction. As it thickens, remove to a serving dish.
  4. Dust generously with sugar and cinnamon before serving.
