Natillas (Spanish Custard)

Ingredients
- 250 ml milk
- 1 piece lemon zest
- 1 stick cinnamon or vanilla
- 10 whole egg yolks
- 200 grams sugar
- sugar for garnish
- cinnamon for garnish
Instructions
- Heat 250 ml of milk with a piece of lemon zest and a stick of cinnamon or vanilla. Allow to cool completely.
- In a separate bowl, beat together the ten egg yolks and 200 grams of sugar until well combined.
- Mix the cooled milk with the egg and sugar mixture. Place this custard in a bain-marie (water bath), stirring constantly in one direction. As it thickens, remove to a serving dish.
- Dust generously with sugar and cinnamon before serving.
